Broccoli Casserole

  • 1 lb fresh broccoli
  • 2 large Eggs
  • 1 cup mayo
  • 1 10oz can cream of mushroom
  • 1/4 cup grated sweet onion
  • 2.5 cups sharp shredded cheddar
  • 1/2 cup bread crumbs
  • dash Salt & pepper
  1. Preheat oven to Steam broccoli with salted water until crisp tender. Combine eggs, mayo, soup, and onion. Fold in Broccoli and 2 cups of the cheese and pepper. Spoon into lightly greased 13x9x2 baking dish. Bake for 30 minutes.
  2. Top with crumbs and remaining cheese, bake 10 more minutes..
